After the renovation of the establishment and equipment, the company has set up a System of management for Food Security which is both sustainable and adequate for hygienic standards international ISO22000: 2005 and IFS, which is the concrete expression of the new corporate philosophy focused not only on the activities’ process, but also on management tasks. This system has been implemented for the detection and monitoring of Critical Points and for the safety of the products at all stages of the production process, starting from the acceptance of raw materials to the delivery and / or distribution of the finished product, passing through intermediate stages of processing and storage. It also activates the criterion of traceability of the products stored within the company and / or already on the market through distribution channels, in order to proceed with the immediate identification and withdrawal of the item if they entail an immediate risk to the consumers’health Salumeria Franchi is now present in both National market and in the EU which now represents 25% of the total turnover of the company and is constantly increasing.
